French Endive or Witloof Chicory Seeds 1495 Heirloom Vegetable. Grown since at least the 1840's, this forcing variety will produce a dainty, delicate salad with a distinctive tangy flavour. Force roots in the winter to produce the ""˜chicons' of culinary interest. C'est magnifique!
500 seed/gram. Sow seed in early spring. In autumn when the foliage dies back, lift the roots keeping only those that are at least 3 cm (1 1/2"") in diameter at the top. Cut off the foliage leaving a 1 cm (1/2"") stub then store the roots on their side packed with dry sand or peat moss in a cool, frost-free place. To force the roots, plant upright in pots filled with sand or soil-less peat mix. Lightly water. Keep the pot in a dark place at 10-15 C (50-60 F).
